in the vineyard : Produced from young 3-5 year old Pinot Noir and Chardonnay vineyards.
about the harvest: Harvest commenced in January 2016 with both varietals being handpicked. Pinot Noir and Chardonnay were pressed separately, with fractional recovery on the whole bunches that ensures the cuvée juice is kept separate from the press fractions. All components are fermented in stainless steel at 14-16°C.
